  • 1 finely chopped onion
  • 2 minced cloves of garlic
  • 1 diced carrot
  • 1 diced celery stalk
  • 1 finely chopped apple
  • 1 cup red lentils
  • 4 cups chicken or vegetable broth
  • 2 tbsp vegetable oil
  • 2 tbsp curry powder
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • ¼ tbsp cayenne pepper
  • 2 cooked chicken breasts, shredded
  • ½ cup coconut milk
  • Salt and pepper
  • Fresh cilantro

  • In a pot, heat the vegetable oil over medium high heat. Add chopped onion, garlic, celery, carrot, and apple and saute until the veggies start to become translucent.
  • Now add and stir curry powder, cumin powder, coriander powder and cayenne powder until the spices start to infuse their flavor and aroma.
  • Add the chicken or vegetable broth and let the mixture come to a boil.
  • Next add red lentils and simmer for about 20-25 minutes or until the lentils are cooked properly and the soup slightly thickens.
  • Gradually add the shredded chicken and stir in along with coconut milk.

Tomato Rasam

  • 4 chopped ripe tomatoes
  • ½ cup cooked toor dal
  • 2 minced garlic cloves
  • 2-3 curry leaves
  • ¼ tbsp asafoetida
  • 1 tbsp black mustard seeds
  • 1 tbsp cumin seeds
  • ½ tbsp turmeric powder
  • 2-3 dried red chillies
  • 1 tbsp tamarind paste
  • Salt and pepper to taste
  • Fresh coriander leaves

  • In a pot, add tomatoes, toor dal, asafoetida, and turmeric powder. Add water suitable enough to achieve the consistency similar to a soup and let it simmer.
  • Take another pan and heat 1 tbsp oil over medium heat. Then add cumin seeds, black mustard seeds, dried chillies, curry leaves and let the spices splutter.
  • Add garlic and saute for 1 minute.
  • Add this mixture to the simmering tomato soup and add tamarind paste and salt. Let it simmer for a few more minutes.
  • Garnish with fresh coriander leaves and serve hot. You can also serve it along with rice or other main course dishes.

Palak Shorba

If you want a healthy and comforting option, brimmed with essential nutrients, this recipe of Palak Shorba is the one for you. You will need the following ingredients.

  • 4 cups fresh spinach leaves
  • 1 finely chopped onion
  • 2 minced garlic cloves
  • 1 inch minced ginger piece
  • 2 green chillies
  • ½ cup unflavored yogurt
  • ½ tbsp cumin powder
  • ½ tbsp coriander powder
  • ¼ tbsp garam masala
  • 1 tbsp vegetable oil
  • Salt to taste
  • Fresh cream

To prepare this, follow the directions given below.

  • In a pot, heat vegetable oil over medium heat and saute onion, chillies, garlic and ginger until the veggies start to turn translucent and soft.
  • Now add spinach leaves and cook until wilted.
  • Once done, let the mixture cool.
  • Blend the mixture along with yogurt until it forms a smooth puree.
  • Pour the blended mixture to a pot and add cumin powder, coriander powder, garam masala and salt.
  • Add water and let it simmer for about 12-15 minutes.
