Ingredients:

  • 2 cups of cooked aromatic rice
  • 1 cup of fresh pineapple chunks
  • ½ cup roasted cashews
  • ½ cup peas
  • ½ cups chopped carrots
  • ½ cup sliced bell peppers
  • 1 chopped onion
  • 2 minced garlic cloves
  • 2 tbsp. soy sauce
  • 1 tbsp. curry powder

  • In a large pan, heat some oil over medium-high heat. Add chopped onion and garlic until you smell the aroma.
  • Now add the carrots, bell peppers, and peas and cook until the vegetables turn soft.
  • Combine curry powder with soy sauce and pour it into the veggies.
  • Add cooked rice and pineapple chunks and cook for another 5-7 minutes until the flavors infuse.
  • Add cashews and season them with salt as per your taste.

Stuffed Greek Tomatoes

This is a classic Mediterranean recipe that combines the flavor of tangy tomatoes with a tempting Italian herb and rice filling that is sure to leave a long-lasting trail of aroma.

Ingredients:

  • 6 tomatoes
  • 1 cup of rice
  • ½ cup raisins
  • 2 minced garlic cloves
  • 1 finely chopped onion
  • ¼ cup chopped fresh parsley
  • ¼ cup fresh mint
  • 1 tsp. Italian herbs
  • ¼ cup olive oil
  • Salt and pepper to taste

Directions:

  • Preheat the oven to 375°F.
  • Meanwhile, chop off the top part of the tomatoes and scoop out the inside pulp. However, don’t throw away the pulp.
  • In a pan, heat some oil over medium-high heat and sauté the onion and garlic until fragrant.
  • Now stir in the rice, raisins, parsley, mint, Italian herbs, salt, and pepper well. Cook for about 4–5 minutes.
  • Then combine the remaining tomato pulp and cook for another 5-7 minutes until the rice is slightly soft.
  • Take a baking tray and place the tomato shells on it. Stuff the shells with the prepared mixture and top them off with the upper chopped part of the tomatoes.
  • Slightly drizzle some olive oil and bake for about 30 minutes until the rice is cooked properly.
  • Enjoy hot!

Vegan Mushroom Risotto

This creamy, scrumptious risotto is the perfect vegan recipe for supper. The richness of earthy mushrooms and aromatic, creamy rice makes it divine.

Ingredients:

  • 1 ½ cups aromatic rice
  • 4 cups of vegetable broth
  • 1 finely chopped onion
  • 2-3 minced garlic cloves
  • 2 cups of sliced mushrooms
  • 2 tbsp. yeast
  • 2 tbsp. olive oil
  • 2 tbsp. butter
  • Salt and pepper to taste
  • Fresh cilantro

Directions:

  • In a pan, heat some oil over medium-high heat and add onion and garlic to it. Saute well until the onion turns golden brown.
  • Add the mushrooms and cook until all the moisture is released.
  • Add the aromatic rice and slightly fry the rice for about 2–3 minutes.
  • Pour in the vegetable broth and keep stirring continuously. Make sure you wait for 30 seconds before pouring each ladle of broth. This will ensure the broth is properly absorbed into the rice.
  • After about 20–25 minutes, you will notice the texture has turned thick and creamy.
  • At this stage, add butter and yeast and season it with salt and pepper.
  • Garnish with fresh cilantro, and enjoy!
