  • Now whisk coconut milk, almond milk, sugar, cornstarch, and vanilla extract until the mixture thickens.
  • Pour the mixture into molds and let them refrigerate for around 4 hours.
  • Dust off with some powdered sugar. Caramelize the sugar using a kitchen torch and serve immediately.

Chocolate Souffle

Ingredients:

  • 1/2 cup melted dark vegan chocolate
  • 1/2 cup aquafaba
  • 1/4 cup sugar
  • 1/2 tsp cream of tartar
  • 1/2 tsp vanilla extract

Procedure:

  • Preheat the oven to 190°C and grease some molds with vegan butter.
  • Now use an electric mixer to beat together aquafaba and cream of tartar until you notice stiff peaks start to form.
  • Add sugar gradually while beating. 
  • Gently fold in the melted dark chocolate and vanilla extract into the mixture.
  • Pour the mixture into ramekins and bake for about 12–15 minutes. Ready; enjoy!

Tarte Tatin

This classic upside-down caramelized apple tart infused with a flaky vegan crust is perfect for all the sweet cravings.

Ingredients:

  • 4 sliced apples
  • 1/4 cup vegan butter
  • 1/4 cup sugar
  • 1 sheet vegan puff pastry

Procedure:

  • Preheat the oven to 190°C.
  • In a pan, melt butter and sugar over medium heat until it caramelizes. 
  • Now add the sliced apples and cook for another 5 minutes.
  • Pour the mixture into an oven-safe dish and place puff pastry over the apple mixture. Tuck the edges around.
  • Bake for about 25-30 minutes until the tart turns golden brown.
  • Cool and serve!

Vegan Macarons

Ingredients:

  • 1/2 cup aquafaba
  • 1/4 tsp cream of tartar
  • 1/2 cup powdered sugar
  • 1/2 cup almond flour
  • 1/4 cup sugar
  • Vegan ganache or fruit preserves

Procedure:

  • Beat together aquafaba and cream of tartar with an electric mixer to form stiff peaks. Simulately keep on adding sugar, one spoon at a time.
  • Now sift in almond flour and sugar and gently fold into the aquafaba. Add any food coloring of your choice.
  • Pipe the mixture onto the parchment paper in small circles. Tap a little and let them rest for 30 minutes.
  • Bake at 150°C for 15-18 minutes.
  • Cool the macaroon before adding the filling.

Mille-Feuille

It is also known as Napolean and features layers of crispy pastry, pastry cream, and a sugar glaze, with each element adding a unique burst of flavors to the recipe.

Ingredients:

For pastry:

  • 1 sheet vegan puff pastry

For pastry cream:

  • 1 cup almond milk
  • 2 tablespoons sugar
  • 2 tbsp. cornstarch
  • 1/2 tsp vanilla extract

For glaze:

  • 1/4 cup powdered sugar
  • 1-2 tsp. almond milk

Procedure:

  • Preheat the oven to 200°C and bake the puff pastry sheet until it turns golden brown.
  • Take a saucepan and whisk together almond milk, sugar, cornstarch, and vanilla over medium-high heat.
  • Cook until the mixture thickens.
  • Cut the puff pastry into rectangles and layer them with pastry cream in between.
  • To prepare the glaze, mix together powdered sugar and almond milk and drizzle on top of puff pastry.
