Enchiladas is a classic Mexican recipe infused with smokiness and flavours. You will need the following ingredients to prepare the filling:

  • 2 cups black beans, cooked
  • 1 cup fresh corn
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cloves garlic, chopped
  • 1 tbsp cumin powder
  • 1 tbsp chili powder
  • Salt and pepper to taste

Sauce:

  • 2 cups tomato sauce
  • 2 tbsp chili powder
  • 1 tbsp cumin powder
  • Salt and pepper to taste

Other ingredients:

  • Corn tortillas
  • Shredded Mexican cheese
  • Fresh basil leaves for garnishing

Follow the procedure given below;

  • In a frying pan, saute onion and garlic until they turn translucent.
  • Add bell peppers and stir fry for another 4-5 minutes.
  • Now combine black beans, corn kernels, cumin powder, chili powder, salt and pepper and cook for about 5 minutes or until the flavors are infused into the filling.
  • In a separate saucepan, simmer all the ingredients for Enchilada sauce for about 6-7 minutes.
  • Meanwhile, preheat the oven to 350°F and warm the corn tortillas.
  • Place a spoonful of filling on each tortilla, roll them up, and place them upside down on a baking dish.
  • Pour the prepared sauce over the tortillas and spread some shredded Mexican cheese over it.
  • Bake for about 20-25 miniutes or until you notice that the cheese is melted.
  • Serve hot!

Vegetarian Quesadillas 

Another classic Mexican recipe that you must try is the vegetariam Quesadilla. For this, you will need

  • 4 large tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sliced bell peppers
  • 1 cup sliced onion
  • 1 cup sliced mushrooms
  • Olive oil
  • Salt and pepper to taste
  • Salsa and sour cream as a dip

Now follow the instructions given below carefully.

  • Heat olive oil in a frying pan over medium-high heat.
  • Saute sliced onions, mushrooms, and bell peppers until they turn soft and translucent.
  • Add salt and pepper to it.
  • In another pan, place one tortilla and add a layer of filling over it. Sprinkle some cheddar cheese and place another tortilla over it. 
  • Flip the tortilla carefully once the bottom side turns golden brown and cook until the cheese melts completely.
  • Slice the prepared Quesadilla into wedges and serve with sour cream and salsa.

Mexican Street Corn

Here’s what you will need to prepare Mexican street corn at home.

  • 4-6 cups of fresh corn
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup feta cheese
  • 1 tbsp chili powder
  • Fresh cilantro, chopped
  • Lime wedges

Follow the procuedure given below.

  • Boil the corn until they are cooked.
  • In a bowl, combine sour cream and mayonnaise. 
  • Spread the mixture over the boiled corn and sprinkle with some feta cheese and chili powder on top.
